Evening opens with “appetizer pig-out” of BLT sliders, sweet bacon and caramel sauce and more. A roasted apple soul topped with pancetta follows. A bleu cheese-stuffed filet wrapped in bacon with a scallion potato galette, buttered sugar snap peas and a bacon and mushroom cognac sauce is the entrée with a mascarpone-stuffed cannoli topped with praline caramel sauce, citrus Chantilly and candied sweet bacon for dessert. Wines paired with bacon have been selected for the dinner for an extra cost.
