Brewtus' Brickhouse brings same package as Moorhead's Brickhouse Tavern
WEST FARGO—Two West Fargoans who helped guide the success of Brickhouse Taverns in Moorhead are feeling good about expanding the business to their backyard town.
Brewtus' Brickhouse opens on Thursday, Sept. 15, in the Oak Ridge retail development on 32nd Avenue South just west of Veterans Boulevard. General manager Dustin Coulter, who is also the GM of Brickhouse Taverns, said Brewtus' will be open 10 a.m. to 2 a.m. seven days a week to start, but owners are looking to expand morning hours with a breakfast.
"It makes my job way easier when the kitchen staff and the front of the house are on point. We'll probably have one of the best staffs in town," Coulter said. "The atmosphere is going to be great, the food is going to be great and the employees are going to be great."
Chief executive chef Jayson Powers said the ownership is giving him free rein to take over the menu planning.
"Obviously, we're very high on our pizza," Coulter said, "but the burgers, wings and everything else, these guys do a great job back in the kitchen. Obviously Jayson has been at this for a long time and knows what he's doing. He's probably one of the best in the game and best in town, so we're lucky to have him."
Powers ran the menu through a test kitchen, and the response was positive. He added that the menu includes choice appetizers and entrees, but like Brickhouse Taverns, the pizza is the focus.
"Everything is made from scratch," Powers said.
He was approached by Brewtus' owners and instantly was looking forward to being part of the project. In his 26th year in the food industry, Powers was intrigued by the idea of a restaurant/bar in the area of West Fargo.
Powers lives in West Fargo, near Brewtus', and said he's confident in his new joint because of Taverns' success in Moorhead.
This side of town is missing these key elements: a kid-friendly restaurant with food that hits that 40-something age group, Powers said. "I'm just really tickled to be here."
The staff, Powers said, has been what has kept Taverns going and will be key for Brewtus' as well.
"All the cooks, all the servers, from upper management all the way down to our dishwashers, they all have a high passion in what we're doing," Powers said.
Coulter, who lives in West Fargo, felt the city needed a family friendly sports bar "with excellent food."
"It's going to be a nice little location with everything that's here and opening up, he said. "It's just going to draw more people to this area, and everybody is going to benefit from it."
