FARGO—Maggie Zelinka's job can be a breeze sometimes, like when she's explaining what customers should know about the cookies at Insomnia Cookies.
"They're delicious, and they're always served warm," she said.
Zelinka, a marketing manager for the company that's now based in New York and Philadelphia, recently helped launch the brand's first location in North Dakota at 412 Broadway. The store opened Saturday, Jan. 7, and will be open from 9 a.m. to 3 a.m. Monday through Friday and 11 a.m. to 3 a.m. Saturday and Sunday.
The business was founded in 2003 by Seth Berkowitz, a University of Pennsylvania student who saw a demand for late-night treats on his campus. There are now more than 100 locations across the country, primarily in college towns and concentrated along the East Coast, though the brand is spreading west and now has a bakery in Denver.
It's more than Insomnia Cookies' late hours that make it stand out: Its bakeries also offer delivery beginning an hour after the store opens until 3 a.m., making it easy to get cookies, brownies, ice cream and more at almost any time.
"People love the fact that we deliver, so it kind of drives our business," Zelinka said.
The offerings at Insomnia Cookies go beyond standard flavors like chocolate chunk or sugar cookies, she said.
Customers can order cookies in any amount they want, ranging from $1.50 for one traditional flavor, $3 for a "deluxe" cookie that's bigger and loaded with more ingredients, $8.25 for a six-pack of traditional cookies, $15.50 for a dozen and $29 for two dozen.
The bakeries offer nine traditional cookie flavors at any given time, as well as three deluxe options and occasional seasonal items, such as butter pecan cookies in the fall.
But there's more than cookies at Insomnia Cookies. The menu also includes ice cream, brownies, cookie cakes, "cookiewich" cookie and ice cream sandwiches, milk and water.
To order, visitors can make their selections and pick up treats in the store, or they can go online at www.insomniacookies.com and pick their store. The company also takes orders through a mobile app that includes a loyalty program for regular customers.
