The Great Indoors: Cullen’s Broccoli Salad a tasty side

Bridget Cullen, executive director of the Cullen Children’s Foundation, joins Tracy Briggs, right, for “The Great Indoors” segment, Cooking with the Stars, to share her quick and simple recipe for a delicious Broccoli Salad. The Forum 2 / 2

As the executive director of the Cullen Children’s Foundation, mom to three busy little boys and wife to NHL star Matt Cullen, Bridget Cullen knows how to multitask. She’s prepping for the final Cully’s Kids Celebrity Weekend fundraiser starting Friday. (While the event is going away, the Cullens will maintain the foundation and endowment).

The golf tournament, silent and live auction and celebrity picnic have raised around $3.3 million for children and families fighting cancer and other medical conditions in Fargo-Moorhead.

Throughout the year, she’s planning for the event from their home in Nashville, Tenn., where Matt plays for the Nashville Predators. Once the season is over, the family moves back home to North Dakota and Minnesota where the final details are put in place. She says they have a great team in place that handles a majority of the work, so she says the event planning has gotten easier, nonetheless it’s a busy time.

So naturally, when it comes to planning and cooking meals for the family, it can’t be too complicated. She’s all about keeping life as simple as you can. So when her sister-in-law got a recipe from a friend for broccoli salad that was easy and delicious, Cullen decided to try it. It became a hit with her family.

She says it’s made the rounds with many of her hockey wife friends, her mother-in-law makes it regularly and her sons, Brooks, 7, Wyatt, 5, and Joey, 4, even like it. (“I know! Can you believe it? My sons actually like broccoli!” she says.)

Watch the video to see how Bridget and I made the recipe even more simple. Why make work for yourself when you don’t need to? The salad is tangy and refreshing after a summer day spent golfing with hockey players.
