“We make all fresh foods. We make our own seasonings. It’s all Mexican recipes, and it’s all authentic,” said Vazquez, who is part of a family operation that runs three restaurants in North Dakota and four in Kentucky.
Menu items include fajitas, steaks, chicken, pork, burritos, enchiladas, quesadillas, seafood, 25 combination dinners, vegetarian combos, children’s meals and specialty items.
The restaurant offers 29 lunch specialties daily from 11 a.m. to 3 p.m., Vazquez said.
“We have pretty much everything on the menu for a Mexican restaurant,” he said. “Our specialty here is we grill.”
Jackie Aponte, a Puerto Rican, has eaten at the restaurant twice.
“I think the food is excellent,” she said. “I like this. It’s called chile relleno.”
Joining her was Randi Butler. “The prices are really good,” she said.
The 6,000-square-foot restaurant seats more than 200, including a conference rooms that holds 80, Vazquez said.
The building, which was originally home to Highway Host, is undergoing a complete remodeling including hand-painted wall murals inside and out, new ceilings, booths and tables. The transitions will be done “a little bit at a time,” Vazquez said.
“I think it’s time for this building to be busy again,” he said.
Jalapenos has applied for a Class F full alcohol license that the Fargo City Commission will address Feb. 22, said Steve Sprague, city auditor.
The company recently opened its second Mi Mexico restaurant in Grand Forks after opening one in Minot a year ago, he said.
Hours of operation at Jalapenos are 11 a.m. to 10 p.m. Monday through Thursday, 11 a.m. to 10:30 p.m. Friday and Saturday and 11 a.m. to 9:30 p.m. on Sunday.
The restaurant employs about 20 full- and part-time workers, he said.
