Crepe craze comes to Fargo

Tara Harris was taken with the crêperies in Europe, whether a small café in Santorini, Greece, or a bicycle cart on the boardwalk in Nice, France.

“We need to bring crepes to Fargo, North Dakota,” she said.

Tara had traveled abroad with her husband, Chris Harris, whose company CH Trade helps medium businesses expand into international markets.

Now the Fargo couple has taken the international cuisine and started a business at West Acres Shopping Center. Crepe Crazy opened at the mall Thursday. It’s a kiosk located near the food court.

Employees wear white aprons and berets. The Crepe Crazy logo pays homage to the Eiffel Tower.

Its crepes, or paper-thin pancakes, are served sweet or savory. They range in price from $3.30 to $6.50.

The dessert crepes come filled or topped with fruit, syrup, whipped cream or powdered sugar.

The savory crepes are more of a meal, such as the ham and cheese, turkey club and Santa Fe crepes.

The batter is made from scratch daily, Tara Harris said. The fruit is fresh.

“It feels like very healthy, homemade food,” she said.

Customers can watch their crepes being made though a half-wall glass partition.

A ladleful of batter is poured in the center of the cast-iron crepe griddle, which was imported from France. A wooden spatula spreads the batter into a thin circle.

Crepe Crazy is the only food-based kiosk in West Acres. Rusty Papachek, mall manager, said when the food court was added on in 2001, two locations were built to accommodate a food kiosk.

Chris Harris said a kiosk was a “happy medium” compared to the bicycle-cart crepe sellers they’d seen in Europe and opening a full-blown restaurant. He said they plan to turn the business into a franchise, and a kiosk would be more affordable for investors.

Besides expanding to other locations, the Harrises plan to expand the hours of the West Acres business, opening early for breakfast.

Emily Erickson of West Fargo and Peter Lavelle of Fargo both tried Crepe Crazy’s crepes Thursday afternoon. Erickson’s was sweet, topped with Nutella whipped cream and powdered sugar.

“This is delicious,” she said. “I really love Nutella, and I can never find it anywhere.”

Lavelle had a Vegetarian Santa Fe crepe, topped with corn, beans, salsa and guacamole. He described it as “tasty.”

“I think this is the first time I’ve ever had vegetables or cheese on a pancake,” he said.
