Luke Maxwell has a lot to talk about with bar patrons and local beer connoisseurs. He is the brewery manager for Granite City Food & Brewery in Fargo. The 27-year-old Fargo man is in charge of finishing the fermentation process, conditioning, filtering and carbonating the five beers on tap at Granite City along with the specialty beers, such as Oktoberfest. “For all the bar-goers, I get to be their hero,” Maxwell said. “It’s exciting for people who drink the beer to know the person who makes it.” Maxwell spends one to two days a week in the brewery, making about 450 gallons of beer to serve each week, and also gives tours

of the brewery to customers. “It’s unique to be the manager and talk with everybody about the beer,”

he said. “A lot of people are amazed at just seeing the vessels and hearing about the process.”
