Leave the marshmallows off sweet potatoes this year

It’s really simple to make: takes about 20 minutes of prep time and 30 minutes to bake.

Baked Sweet Potatoes and Apples

It’s really simple to make: takes about 20 minutes of prep time and 30 minutes to bake.

3 sweet potatoes (6 cups sliced or cubed)

2 medium-sized apples, sliced

¼ cup brown sugar

¼ tsp. salt

½ tsp. nutmeg

2 T. butter

1 T. honey

2 T. hot water

Peel and slice the sweet potatoes, and boil them in water until they are almost tender (8 to 10 minutes). Peel the apples. Remove the cores and slice.

Mix together the brown sugar, salt and nutmeg. Spray a casserole dish with nonstick cooking spray. Put a layer of sweet potatoes on the bottom of the dish. Add a layer of apple slices. Sprinkle with sugar, salt and tiny pieces of margarine or butter. Repeat layering process. Mix the hot water with honey and pour over the top layer. Bake for 25 to 30 minutes or until the apples are tender. Note: You may want to cover this dish with foil during at least part of the baking time to seal in the moisture.
