Spinach dish a great holiday side

When I was a practicing Realtor in Grand Forks, I found this recipe 27 years ago tacked to the wall in an old vacant Red River Valley farmstead kitchen. I don’t even know who Uncle Ben is, but I sure do like his delicious spinach, especially at our Thanksgiving dinner or during the busy Christmas holiday season when I’m entertaining.

Uncle Ben’s Stuffed Spinach

When I was a practicing Realtor in Grand Forks, I found this recipe 27 years ago tacked to the wall in an old vacant Red River Valley farmstead kitchen. I don’t even know who Uncle Ben is, but I sure do like his delicious spinach, especially at our Thanksgiving dinner or during the busy Christmas holiday season when I’m entertaining.

1 10-oz. pkg. frozen chopped spinach, thawed and squeezed dry

¾ cup bread crumbs

½ cup butter, melted

¼ cup Parmesan cheese

3 large eggs, lightly beaten

1½ tsp. ground black pepper

Several sliced tomatoes

Preheat oven to 350 degrees. Lightly grease an 8x8-inch baking dish. In a large bowl, combine spinach, bread crumbs, butter, cheese, eggs and pepper. Spoon mixture into prepared dish. Bake for 15 to 18 minutes or until firm. Garnish with several sliced tomatoes and ground black pepper. Serve immediately.
