Tasty: Change of season brings fall treats to K’s

FARGO – Like Cinderella’s carriage at midnight, desserts and coffees turn to pumpkin in the fall.

Karen Fabre Wills, owner of K’s bakery in Fargo’s Kmart Plaza on South University Drive, said “everything turns to pumpkin” this time of year.

“Pumpkin, apple and pecan are your staples for fall pies and bars,” Fabre Wills said.

Nutty treats become a little more popular in the fall, which is mostly seen in pecan-studded treats, she said.

“But to be honest, on nuts, either you like them or you don’t, so we don’t see a lot of change with that in the fall,” she said. “We probably do a little more pecan pie in the fall for people just walking through the door.”

The fall cycle has a pattern, Fabre Wills said. Right now, pumpkin is the draw du jour, but soon apple treats will take over as the apple harvest comes into full swing in late September and October.

Pumpkin desserts make a return by Thanksgiving, when the all-American pumpkin and apple pies are in high demand.

As far as spices, ginger and cinnamon also show up when the leaves are turning.

“We sell more ginger snaps in the fall, probably more than any other time of year,” Fabre Wills said.

Pumpkin bars

This moist pumpkin dessert is topped with a creamy frosting and is a fall favorite in this area.

Pumpkin Kahlua cheesecake

With a little bit of ginger and molasses flaked into the graham cracker crust, this cheesecake marbled with pumpkin and Kahlua makes for a rich, decadent treat.

“It’s a nice alternative to pumpkin pie,” Fabre Wills said.

Cupcakes

Pumpkin cupcakes with a pumpkin-spice frosting are a love of K’s patrons.

Apple dumplings

The season for apple treats may not be in full blossom quite yet, but they’re still available.

The dumplings have a flaky, sweet crust filled with juicy apples and sauce. Dumplings are time-consuming to make, but well worth it, Fabre Wills said.

Apple bars

K’s apple bars taste just like a slice of apple pie but in a condensed package, making them easy to take on the run.
