Mystery munchies: There’s ketchup in these cookies (with video)

FARGO – I recently found a cookie recipe on what I thought was one of the most unlikely of places – the back of a Heinz Tomato Ketchup bottle. Intrigued and a little grossed out, I perused the recipe’s ingredients to find that, sure enough, the recipe for Tic Tac Toe cookies does call for ketchup.

FARGO – I recently found a cookie recipe on what I thought was one of the most unlikely of places – the back of a Heinz Tomato Ketchup bottle.

Intrigued and a little grossed out, I perused the recipe’s ingredients to find that, sure enough, the recipe for Tic Tac Toe cookies does call for ketchup.

I couldn’t help but wonder how the cookies tasted and soon found various recipes for seemingly innocent foods like muffins and brownies that called for unlikely ingredients.

The cookies were surprisingly tasty. The peanut butter dominates the taste in the cookie, and they weren’t too difficult to make. But I have a hard time mentally getting over the fact that they contain ketchup.

A panel of Forum reporters taste-tested the cookies and agreed they weren’t bad.

John Lamb said it looks and tastes like a peanut butter cookie.

Our next strange recipe came from Christine Forbes of Fargo, who gave up animal products a little more than a year ago and in doing so, had to relearn how to cook, she said.

She’d found recipes for black bean brownies in cookbooks and online, but wasn’t crazy about them so she came up with her own.

The brownies are easy to make and full of fiber, protein and iron, she said.

When my 8-year-old daughter Caitlin saw the brownie ingredients in the blender (from across the room), she said, “Oh, that looks good,” with a lot of anticipation and enthusiasm in her voice.

But upon closer inspection, she quickly changed her mind.

“Oh, it’s beans and applesauce. Gross,” she muttered.

The brownies were very easy to make and they look like fudgy brownies, but if you’re expecting the delicious gooiness of a real brownie, you will be disappointed.

I didn’t think they were too bad fresh out of the oven, and my 2-year-old son, Breckin, asked for more.

The Forum taste-testers, however, were not impressed.

Angie Wieck said they seemed like they weren’t baked, and Sam Benshoof said they were way too soft.

The worst of the bunch, in both taste and texture, were the Fat-Burning Chickpea Muffins. For me, these were the biggest disappointment because I really, really wanted them to be good. Instead they were bland, crumbly and dry.

None of my family members liked them. Neither did The Forum panel of taste-testers.

“That’s gross,” said Marino Eccher as soon as he tasted the muffin.

Benshoof said it tasted raw.

The muffin recipe came from TV’s Dr. Oz. The recipe on the website states you can beat the belly bulge in just seven days by adding one cup of beans to every meal because they contain soluble fiber, which works to lower the inflammation that causes belly fat.

The fat-burning muffin recipe was suggested as a way to start the day off right.

But my muffins looked nothing like the beautiful tasty-looking muffins pictured on the website.

And it looks like the problem wasn’t mine alone. Others who posted comments on the site said their muffins were also crumbly and gross and did not look like the muffins pictured.

Tic Tac Toe Cookies

Ingredients:

1½ cups flour

½ teaspoon baking soda

½ teaspoon salt

¾ cup chunky or creamy peanut butter

½ cup softened butter or margarine

½ cup granulated sugar

½ cup firmly packed brown sugar

¼ cup Heinz Tomato Ketchup

1 egg

Preparation

Preheat oven to 375.

Sift together flour, baking soda, and salt. Set aside.

Cream together peanut butter, butter or margarine, sugar, and brown sugar until light and fluffy. Add Ketchup and egg; beat until well mixed.

Thoroughly blend flour mixture into peanut butter mixture.

Drop by tablespoons onto baking sheets lined with parchment paper. With fork dipped in flour, press cookie flat, making impressions in two directions.

Bake 8 to 10 minutes or until golden brown. Cool on wire rack.

Christine’s Black Bean Brownies

In a blender, add:

1 can black beans, drained and rinsed

1½ cups unsweetened applesauce

1/3 cup agave nectar

¼ to 1/3 cup unsweetened cocoa powder

1 teaspoon vanilla extract

2 tablespoons raw sugar

May add 1 tablespoon cinnamon or instant espresso powder

Blend above ingredients until smooth.

Add to ½ cup of whole wheat pastry flour (or any flour that you have on hand, even instant oats will do) and stir until blended.

Bake in an 8-by-8 pan sprayed with cooking spray on 350 degrees for 30 to 35 minutes

Cool completely before slicing

Fat-burning Chickpea Muffins

Ingredients:

1 can or 2 cups boiled chickpeas

2 grated carrots

2 teaspoons nutritional yeast

2 teaspoons poppy seeds

1 teaspoon olive oil

Salt and pepper to taste

Preparation:

In a large bowl, mix all of the ingredients, except the poppy seeds, until you get a doughy consistency. Evenly drop spoons of dough into muffin pan. Top with poppy seeds and bake for 30 minutes at 350°F.
