Hungry for More: Leftovers transform into creamy fall soup

Fall is in the air. It’s sweater season and the perfect time to make a nice, warm bowl of soup. “Hungry for More” host Jim Manney takes us back to Mezzaluna with Chef Jeff Reitz, where he uses the homemade chicken stock from last week’s online episode and turns it into an easy and delicious pureed potato soup.

It’s sweater season and the perfect time to make a nice, warm bowl of soup.

“Hungry for More” host Jim Manney takes us back to Mezzaluna with Chef Jeff Reitz, where he uses the homemade chicken stock from last week’s online episode and turns it into an easy and delicious pureed potato soup.

The best part? You can just use your leftovers.

Potato Soup

1 onion rough chopped

5-6 stalks of celery rough chopped

Chicken stock

Cream

2-3 cups leftover mashed potatoes

1 teaspoon garlic

Olive oil

White wine

Salt and pepper to taste

Saute onion and celery in olive oil until soft. Deglaze the pan with white wine and add equal parts chicken stock, cream and mashed potatoes.

Bring to a boil, then lower heat to a simmer and stir occasionally until it has a velvety texture.

Pour into blender and puree smooth. Season to taste with salt, pepper, garlic and more white wine. Blend again.

Serve and garnish with green onion.
