NEW YORK — Best Buy is the latest retailer to open up earlier on Thanksgiving Day this year. The Minneapolis-based electronics chain will open at 6 p.m. nationwide on Nov. 28, much earlier than last year's midnight openings.

When I was a practicing Realtor in Grand Forks, I found this recipe 27 years ago tacked to the wall in an old vacant Red River Valley farmstead kitchen. I don’t even know who Uncle Ben is, but I sure do like his delicious spinach, especially at our Thanksgiving dinner or during the busy Christmas holiday season when I’m entertaining.
Some may spend a bunch of worry on the holiday turkey, but really, what part of the Thanksgiving meal can make or break the turkey, the potatoes and the dressing? It’s the gravy, baby. I pulled out my cookbooks, experimented and came up with something fabulous.
For me, Thanksgiving is inevitably too much, too rich, too frenzied. Even when there were only four of us, my mother used to get up at 5:30 on Thanksgiving morning to start cooking, huffing and puffing all the way, ’til my father revved up his electric carving knife and dinner was served.
