Panchero's Mexican Grill, a quick-service, fresh Mexican food franchise, is coming to Moorhead.

The restaurant will be located off Eighth Street South and Belsly Boulevard, about a quarter mile south of Interstate 94.

"We feel that's where the majority of growth is moving in south Moorhead," said Scott Majkrzak, 28, Fargo, Panchero's Mexican Grill franchise owner for North Dakota and Clay County.

"There's definitely an opportunity for us to bring this style of restaurant to the area," Majkrzak said.

A new building is being constructed to house the restaurant and two retail establishments, Majkrzak said.

The restaurant is planned to open in January or February.

Majkrzak and his partners, Bob and Steve Majkrzak and Mike and Andy Skatvold, opened North Dakota's first Panchero's restaurant in Bismarck in late July.

They would like to open four additional locations in North Dakota within the next two to three years, including Fargo, a news release stated.

Iowa-based Panchero's Mexican Grill serves homemade tortillas, and made-to-order burritos, quesadillas, tacos, burrito bowls and salads.

"It's like a Mexican Subway," Majkrzak said.

Panchero's currently has 45 locations in 14 states.

To mark its 50th aAnniversary, Bobcat has introduced "Bobcat: Fifty Years of Opportunity - 1958-2008."

The book traces the humble beginnings of the first compact loader to what has become a worldwide brand icon.

It contains interviews with many of the key individuals who helped transform the North Dakota company into a global leader. They include Cyril and Louis Keller, inventors of the first loader; Sylvan Melroe, the company's first advertising manager; Eugene Dahl, brother-in-law to the four Melroe brothers and a former company executive; past presidents, management team members, former demonstrators and engineers and other retirees.

The 11-chapter, 264-page book authored by Marty Padgett will not be sold in stores.

Concordia business ethics lunch Nov. 2
