North Fargo's 701 restaurant steadily nearing completion

Like other building projects in the F-M area, construction on the restaurant has met some delays due to issues tied to the pandemic, but a co-owner says it's likely to host soft openings in February and be fully open in March.

FARGO - 701, a restaurant going up just north of downtown, is nearing completion.

“We probably could open in January, but I think we’re going to push it to February with soft openings and probably full opening in March, because of COVID,” co-owner Shelby Terstriep said Tuesday, Dec. 1. “It just depends on how a vaccine gets rolled out and how things are looking for opening restaurants and safety and all that.”

The restaurant at 701 N. University Drive incorporates the former Rosie’s Laundromat building. (The building, constructed in 1920, had originally been the home of Acme Dairy.)

Getting 701 built at the corner of 7th Avenue North and North University Drive has been a journey. At one point, the goal was to have it open last year at this time. But plans and the ownership group changed. Then along came the COVID-19 pandemic, and like so many other construction projects in the Fargo-Moorhead area, there were further delays. But Terstriep said the restaurant is steadily nearing completion.

“It’s so cool. We’ve had to battle a lot of quarantines, but since we weren’t in a rush, it didn’t affect us as much as it could have if we were on a real mission to get it done,” Terstriep said. “With everything happening with restaurants, it’s hard to think about opening a restaurant at this time. But otherwise, our contractors are awesome. We’re excited for the finished product.”

The second floor of 701 will be called Camp Lonetree, named after her father’s hunting camp, Terstriep said.

“All the furnishings will feel like you’re in a cabin. It’s a real casual affair,” Terstriep said.

There will be a rooftop patio with a firepit, and room to play shuffleboard, bean bag toss, or other games, depending on the season.
The main level will be called Prairie Kitchen, which will source a lot of its food from local farmers and ranchers. Terstriep said it will be casual dining, so people can feel comfortable in jeans or dressing up, too.

The ownership group consists of Terstriep and her husband, Chad; Britt and Alex Belquist; and Eric and Sara Myhre. Local concert promoter and developer Jade Nielsen left the 701 ownership group. Nielsen is a partner with Fargo Brewing Co., which is kitty corner to 701, and Terstriep said she anticipates 701 will collaborate with Nielsen and Fargo Brewing.

The Terstrieps and Belquists are also partners in other ventures, including Fargo’s Brew Bird restaurant.

Terstriep said hiring is underway for 701, and she encourages people to follow the restaurant on Facebook and Instagram for more details on opening dates.

701 is “starting to look cool. The tile is in there, the countertops to the bars. The camp part is all cool, like wood walls. All those finishing details are coming. The ceilings are being painted. The finishings are starting to happen,” she said.
