FARGO - A Chipotle Mexican Grill is still planned near North Dakota State University, though various delays have pushed the burrito blastoff from a once-hoped-for August opening into early December.

The restaurant will go into a former bank building at 1204 19th Ave N. in the university village area just east of McDonalds, North University Drive and the Fargodome.

“I believe we’re getting everything squared away,” said Alandra Matthews, who will be the general manager of the new store. “It looks like we’re back on track.”

Matthews is now working as the assistant manager at Chipotle’s Fargo store at 1680 45th St. S., near West Acres.

Matthews said she is aiming to have a crew trained to open the store in early December.

She said the new Chipotle will be designed with a pick-up window, so that customers can order their food in advance and not have to leave their car to pick it up.

In its reporting for the second quarter of 2019, Chipotle said digital sales had risen 99.1 percent, accounting for 18.2 percent of the company’s sales in the quarter.

The firm is headquartered in Newport Beach, Calif. It opened 20 new restaurants and closed one in the second quarter of 2019. That brought the total number of restaurants under its corporated umbrella to 2,523 as of June 30.

Beyond the United States, Chipotle has restaurants in Canada, the United Kingdom, France and Germany, all of which are company owned. It has more than 80,000 employees.

The first Chipotle was opened by company founder and executive chairman Steve Ells in Denver in 1993.

Chipotle Mexican Grill stock was trading at nearly $780 per share in early trading Monday, Aug.5.

In the last 52 weeks, it has traded at a high of $811.95 per share and a low of $383.20, according to Yahoo! Finance. The 50-day moving average is $751.47 per share
