FARGO - El Vaqueros Taqueria and Mexican Restaurant is now serving up their take on fast-casual southwest cuisine.
The restaurant, at 3001 13th Ave. S. in the Promenade at 13th mall, opened Saturday, Aug. 3, co-owner Georgina Sandoval said.
“People are loving the food, loving the service,” Sandoval said Wednesday, Aug. 7.

The location is right, she said.
“There’s a lot of businesses around here (with employees) that could use good food and good service,” she said.
Sandoval opened the restaurant with her husband, Simon. She said they’ve been working on their recipes for years.
El Vaqueros’ specialty is tacos, but they also serves burritos, enchiladas, fajitas, carnitas, tortas, taco salad and barbecue. Diners can choose their own salsa at the salsa bar, Sandoval said.
They do not serve liquor. However, they do offer agua fresca, water with seasonal fruit blended or squeezed in, as well as other flavors, Sandoval said.
The restaurant is open 10 a.m. to 10 p.m. daily. A grand opening celebration is planned in about a month, she said.
Patrons can dine in, sit on the large deck, or get their order to go.
“It was the right time. Fargo needed some fast food Mexican,” Sandoval said.
