FARGO - National Hospitality Services announced this week that Eric and Sara Watson have joined the team at Delta Hotels by Marriott Fargo and Urban 42 Kitchen + Bar, 1635 42nd St.

Both prominent figures in the Fargo-Moorhead culinary scene, Eric is serving as the hotel and restaurant’s executive chef, and Sara is the food and beverage director.

“We could not be more thrilled to have the Watsons on board with us at the Delta,” said Norman Leslie, president of National Hospitality Services, the management company which oversees the Delta. “With their vision and leadership, we’re changing the game for hotel events and catering here in Fargo, and will be delivering a culinary experience like none other in our region.”

Formerly owners and operators of restaurants Mezzaluna in downtown Fargo and Rustica in Moorhead, as well as MosaicCatering, the Watsons joined the hotel’s team earlier this summer, and have spent the last two months transforming the Delta’s restaurant and catering operations.

“Eric and I are thrilled to join the Delta Fargo team,” Sara Watson said. “While the independent restaurant run and catering have been quite an adventure for the past 16 years, we are excited to go back to our roots of resorts and hotels by joining this larger operation.”

Eric and Sara will also bring their current catering service, Mosaic Catering, to the Delta. Now branded as Mosaic Catering by Delta Fargo, they will offer chef-crafted catering for events taking place both inside the hotel, as well as external events in the community.


“Mosaic Catering is alive and well,” Sara said. “Our touch is evident in all menus served at the Delta, and Mosaic off-site catering is still available, operating under the name Mosaic Catering by Delta Fargo. We look forward to experiencing the benefits and challenges ahead of us, and are very excited to be a part of this organization.”
