FARGO - South Fargo will soon be home to more South of the Border cuisine as fit-up is now underway for a Casa Mexico Restaurant at the Time Square East mall.

Workers were bustling about inside and outside Wednesday, Oct. 9, to revamp the space at 4950 13th Ave. S. that was once occupied by an Applebees and most recently by a Village Inn, which closed in 2018.

Owner Sergio Aguirre is aiming to have the restaurant open by the beginning of November.

“If we have everything ready before that, we might open a few days early, but that is pretty much what we are shooting for,” he said Wednesday, Oct. 9.

Aguirre said he’s been looking for several years for the right space to become available in Fargo.

Casa Mexico offers a wide variety of fresh-made Mexican dishes, as well as some American and children’s menu items, he said.

“Our variety is pretty extensive, over 100 different meals on the menu,” he said.

The restaurant’s space is large, so Aguirre plans to offer two eating options. One of the options will be for normal, full-service table service. The other will have customers choosing their foods from a service line. That second option should be a boon to people who have limited lunch breaks, he said.

The restaurant will also offer carry-out and he plans to work with app-related delivery services.

Aguirre has been a restaurateur for 30 years. He owns seven restaurants, including the Casa Mexico Restaurant in East Grand Forks, Minn.; La Carreta Mexican Restaurants in Bismarck and Jamestown, N.D.; the El Toro Mexican Restaurant in Wahpeton, N.D., and three other restaurants in Alabama.

Aguirre is seeking a full liquor license. An application for that license will be heard by the city Liquor Control Committee on Wednesday, Oct. 16.

The mall has seen a couple of eateries shuttered this summer, including the Pita Pit and a Tutti Frutti frozen yogurt shop.
