WEST FARGO — After a decades-long run on University Drive S. near Interstate 94 in Fargo, Randy's University Diner is set to open a second location in West Fargo, owner and general manager Heidi Roggenkamp told The Forum.
Roggenkamp first announced the news via Facebook Saturday, May 1.
"A second Randy's is coming to West Fargo!" the post read, "I am excited, nervous and extremely proud of my team!"
Roggenkamp is hopeful to have the second location open by New Year's near the intersection of 32nd Avenue South and Sheyenne Street.
"We'll start building soon and the process of construction will be around that seven-month range," she said Wednesday, May 5.
Roggenkamp said the new diner will offer a dining option for all ages in the area. "I think it's needed. There are a lot of great places to eat in West Fargo," she said. "A lot of them are bars, so I think having another option where it's family-friendly and with all the churches over there, there's not a lot of options on Sunday. Overall, it's going to be a nice addition."
Randy's Diner originally opened at 2130 University Drive S. in 1980. Much has changed in the metro area across the ensuing four decades, though, especially in the southwest portion of the city which features several new developments.
The new Randy's Diner will be a bigger and better version of the original. "Obviously it's going to be more modern," Roggenkamp said. "This building has been here a long time, so it'll be an updated, upgraded version to fit into the neighborhood there."
The original Randy's Diner seats 120, while the new location will seat 150.
Once the new location is ready to open, employees from the existing Randy's Diner will train new employees for the new West Fargo location.
"My team here is ready to train people and then they're going to split up and make sure both places are taken care of," Roggenkamp said.
Dirt work is currently underway at the new site, Roggenkamp commented.
Once opened, Randy's Diner will join an area of West Fargo littered with new construction such as The Lights on Sheyenne 32, Traditions Restaurant and Bar as well as Mas Tequila, which is expected to open in June.
"I'm excited to be a part of a new area of town and make some connections in the community on that side as well," Roggenkamp remarked. "My team is excited and I'm excited."
