FARGO - A third Chipotle Mexican Grill is coming to Fargo - it just might take some time.

The restaurant is planned for 3061 25th St. S., an address that once belonged to a Kentucky Fried Chicken store.

The plan was confirmed Tuesday, June 15, by a Twin Cities-based spokeswoman.

“We are putting in a third restaurant, but it’s not set to open until Q1 of 2022,” said Brittany Baldwin, area manager for Chipotle.

Baldwin said it hasn’t been determined whether the KFC building will be razed and a new building constructed, or if the current building will be repurposed as a Chipotle.

“We have no idea, we haven’t signed anything yet. That’s why it’s been pushed out for at least another six to nine months,” Baldwin said.

She said details on the new store are expected to be finalized in another month.

“Nothing’s finalized. We just know it’s coming,” Baldwin said. “And also, due to COVID, a lot of things can change.”

City permitting records indicate the new restaurant will be 2,373 square feet and the work could cost about $500,000, not including interior fit-up.

Fargo’s other two Chipotle restaurants are located in high traffic areas of the city. The first in the area was put up at 1680 45th St. S., along the busy retail and commercial corridor west of the West Acres mall.

The second opened in December 2019 at 1204 19th Ave. N., near the Fargodome and the North Dakota State University campus.

Baldwin said Chipotle “has definitely talked about” opening more restaurants in North Dakota and northwest Minnesota.

Chipotle is faring well. The first quarter 2021 financial reports, released at the end of March show that the company’s revenue increased 23.4% to $1.7 billion, compared to a year earlier.

Comparable restaurant sales were up 17.2% and digital sales grew 133.9% compared to the previous year, and accounted for just over half of all sales.

The company opened 40 new restaurants in the first quarter of 2021, and closed five, bringing the company’s total restaurant count to 2,803 at the end March. All Chipotle restaurants are corporate-owned.

According to the first quarter report, Chipotle plans to build 200 new restaurants, providing there are minimal construction and permit delays related to the COVID-19 pandemic.

Chipotle Mexican Grill operates in the United States, Canada, the United Kingdom, France and Germany. The company has more than 97,000 employees.

Steve Ells, founder and former executive chairman, opened the first Chipotle restaurant in 1993 in Denver, Colo.
