FARGO - Kelly Burm is making the leap from home kitchen to downtown storefront.

Burm is the owner of Nosh Kitchen, a West Fargo home-based business that is making the jump to 220 Broadway N., the space once occupied by Twist bar and restaurant.

She’s been telling people about her plans on Nosh’s Facebook page for a couple weeks, but recently served notice on the Broadway facing windows that Nosh is ready to satisfy downtown’s cravings for the sweet and the savory.

Burm wants to open sometime in early November.

“I don’t have an exact open date. There have been a couple of pushbacks just because of me trying to get in there and them trying to get old stuff out and getting cleaning done before I get my inspections,” Burm said Wednesday, Oct. 13. “I want to be in there for the holidays for sure.”

Nosh Kitchen will offer a small bakery with items ready-to-go and filling orders made in advance. It will also operate like an “indoor food trucky” type of concept, Burm said.

“You can come to us. You can stay out of the rain, stay warm,” while ordering from items on a revolving menu that changes every two weeks.

All of those foods will be served to go or by order. There will also be take-and-bake items “for busy families or those who don’t like to cook and just want a homestyle meal,” she said.

The focus will be on comfort food as cold weather sets into the region: lasagna and other pastas, soups, potato bowls, braised short ribs, enchiladas. Lighter fare will come when the warm weather returns.

“We’ll try to mix it up a bit, something for everyone,” Baum said. “A lot of good stuff!”

She plans to have some vegetarian items, but won’t have gluten free items until she had adjusted to the new space.

Delivery will include bakery and take-and-bake type items ordered ahead, but not lunch and dinner.

Old kitchen equipment is being pulled and the space deep cleaned for inspection and licensing.

“I’ll know a little bit more by the end of the month as far as opening time,” Burm said.

It’s a family oriented business, she added, saying that most of her family is working for her in the venture, either in the kitchen or the front of the store.

“It’s come a long way from two and a half years ago” when the business started, she said.

“We're rolling through this pandemic, and people think I’m a little crazy for trying to do this at this time. But you have to seize the opportunity when it comes, I think,” Burm said. “It’s been a little wild lately, but in a good way.”
