WEST FARGO - The Piggy BBQ restaurant is getting ready to go whole hog in West Fargo.
The barbecue emporium is set to officially open May 7 in Aurora Plaza, 816 24th Ave. E.
Steve Hopper is a co-owner of The Piggy BBQ , along with his wife, Amie Hopper, and his mother-in-law, Kim Hoffman. They also own the original The Piggy BBQ in Walker, Minn.
“We were looking to expand and this just seemed like the place to go,” Hopper said Monday, April 27, as he and senior staff supervised the restaurant’s fit-up.
The menu will be limited, with emphasis on the barbecue, including big, meaty racks of ribs, brisket, burnt ends and pulled pork.

“We don’t do a lot, but everything we do, we do well,” Hopper said.
“There’s no flat-top (grill) and no fryer,” Hopper said, so no French fries or burgers.

West Fargo's Nosh Kitchen is ready to satisfy your sweet tooth.
Side dishes include brisket chili, double-cooked beans, macaroni and cheese, cole slaw, potato salad and cornbread, he said. There is also a full bar for cocktails, beer and other beverages.
The restaurant has a focused menu so “the food comes out fast,” Hopper said. It also makes it easy to cater to large parties, he said.
At the same time, the food is made fresh every day so sometimes, some items run out, Hopper said.
Construction is on track and the May 7 opening date gives plenty of time for clean-up and testing the kitchen and training staff, Hopper said.

Several construction trades workers were completing work Monday, while furniture was stacked in the dining area, ready for assembly and placement.
While the shut-downs to slow the spread of the COVID-19 virus in Minnesota and North Dakota have slowed business, it has had the benefit of making hiring much easier for the new restaurant, Hopper said.
The Piggy BBQ is on the west side of Veterans Boulevard next to the Nothing Bundt Cakes shop. Aurora Plaza is also home to Mr. Wok and Ice Point.
The Piggy BBQ got its start in Walker, Minn., in 2012.
