FARGO – Fargo’s newest restaurant and bar, The Toasted Frog, opened quietly Thursday afternoon.
And that’s just how business partners Jonathan Holth, Scott Franz and Shawn Clapp like it.
“That way, it’s not all at once,” said Holth, adding that with a new staff it works best to let people ease into things.
“They just need to work their way up to it. It’s good for us and it’s good for the customers, too,” Holth said.
It’s a model, he said, that worked well with the opening of the first Toasted Frog in Grand Forks and the brand’s second location in Bismarck.

All of the operations are in downtown settings.
“We like to take the old buildings and take what they have to offer, make it part of our ambiance,” Clapp said.
Toasted Frog doesn’t serve lunch, but at supper time customers have much to choose from, including sandwiches, fresh seafood (flown in daily) and wood-fire roasted pizza.

Kitchen hours: 4 p.m.-11 p.m., Monday through Thursday; 4 p.m. to midnight, Friday and Saturday. Closed Sunday.
Bar hours: 4 p.m. until closing.
