There's the one thing in everyone's fridge that we never know what to do with ... leftovers.

Sure, it was great when you ate it the first time, but the second time around just doesn't bring the same satisfaction.

This week on "Hungry for More," host Jim Manney is back at The Beefsteak Club with Chef Scott Motschenbacher where he shows us how to use leftover mashed potatoes to their fullest.

With just a few simple added ingredients and some savory Gorgonzola cheese, you can transform those pesky extra mashed potatoes into a favorite side dish or appetizer.

POTATO GNOCCHI

3 cups chilled mashed potatoes

2 large eggs

¾ cup all-purpose flour

1/3 cup Gorgonzola cheese

1 teaspoon cayenne pepper

1 teaspoon sage

1 tablespoon each salt and pepper

1 tablespoon roasted garlic

Mix all ingredients thoroughly. Form into small balls. Boil in water for 2-4 minutes. Then add to a hot non-stick pan with 2 tablespoons of butter and 1 tablespoon of olive oil. Cook until both sides are browned. Garnish with fresh Parmesan cheese.
