A truckload of live bigmouth buffalo fish left the waters of the James River near Buchanan on Wednesday. By Friday the fish will be in the restaurants and Chinese markets of New York City, said Gene Van Eeckhout, district fisheries supervisor for the North Dakota Game and Fish Department.

"They say they make money on the buffalo fish," he said.

While many consider this fish tasty, it is seldom caught or served in this area.

"They are filter feeders," said Van Eeckhout. "The only way you are going to catch one of these fish is by accident."

Or in a big-city seafood restaurant.

"We deliver them to a buyer in New York," said Paul Mertins, truck driver for Jerry Miller, owner of the commercial fishing operation. "They deliver them out to the restaurants where they put the fish in an aquarium and customers pick out which one they want."

The menu on the Web site of Joe's Shanghai Restaurant in Flushing, N.Y., lists spicy buffalo fish belly at $14.95 and braised buffalo fish tail at $13.95. This compares to squid with salted vegetables and jalapenos for $12.35.

Miller and his crew travel to regional lakes from their headquarters in Browns Valley, Minn., Van Eeckhout said. They use seine nets to trap the fish.
