FARGO -- You walk inside Prime Cut Meats on 24th and University and are instantly greeted by different styles and types of meats. From deer to pork to seafood (and even cheese!!); all displayed around the store.
"We try to carry stuff that is all natural and minimally processed," said owner Kevin Jenkins. "We strive for quality."
But the one thing that's been paying the bills lately is wild game.
"Being a full-service retail meat shop, we slow down in the winter months," said Jenkins. "Wild game processing is a huge part that pays the bills in February...March. When people aren't outside grilling all the time."
Jenkins says he's seen about a 25 percent increase in wild game, give or take.
"I think there's a lot of people that didn't do it this year, a lot of processors," he said. "And then on top of that I think a lot of people started to do it at home, and so we carry all the supplies they need for that."
It might keep him from making it home for supper in time, but he says it's worth it.
"That busy month that you have is worth it two...three months down the road," Jenkins said.
Prime Cut Meats handles wild game from start to finish. This includes hide-on der, trim and quarters.
